Vanna's Recipes from the Southern Women's Show
Garlic Fries
*1/2 (26 ounce) bag frozen "fast food" fries
*2 tablespoons extra-vigin olive oil
*1 1/2 teaspoons minced garlic
*1 teaspoon Greek seasoning
*Store bought tzatziki or gyro dressing for serving
On a baking sheet, toss together fries, olive oil, garlic and seasoning. Arrange fries in a single layer. Broil 6 inches from heat source for 5 to 8 minutes. Serve fries hot with tzatziki for dipping.
Fried Chicken Salad
*1 (12 ounce) box of popcorn chicken
*2 bags of pre-packaged salad
*1/2 cup ranch dressing
*2 teaspoons BBQ seasoning
Line a baking sheet with aluminum foil and place popcorn chicken on baking sheet. Bake for 8-10 minutes. Remove from oven and let cool.
DRESSING - Mix together ranch dressing and BBQ seasoning in a small bowl and set aside.
FOR SALAD - Place salad in a large bowl. Add dressing and toss until lettuce is coated. Top with chicken.
Peanut Butter Cups
*1 package refrigerated sugar cookie dough, softened
*1/2 cup creamy peanut butter
*prepared chocolate frosting
Preheat oven to 350. Grease mini cupcake pans with non-stick cooking spray. Mix cookie dough with peanut butter just until swirled. Press 1 rounded teaspoon of dough into each of the prepared cups. Bake for 12 minutes. Cool in pans. Run a small knife carefully around the edge. Remove from pans to a cooling rack. When completely cool, place a scant teaspoon of frosting in the center of each cookie.
Smoked Turkey, Brie and Apricot Quesadilla
*8 taco size flour tortillas
*5 ounces of brie cheese, sliced
*3/4 pound smoked turkey breast, thinly sliced
*1/2 cup apricot preserves
*1 cup shredded Monterey Jack cheese
*1 cup of fresh mixed herbs (parsley, basil, tarragon, chives, mint, oregano)
*1 tablespoon fresh lemon juice
*salt and pepper
Lay out four tortillas, top each with brie, smoked turkey, apricot preserves and Jack cheese. Top with remaining tortillas.
In a bowl, toss to combine herbs and lemon juice. Season with salt and pepper, set aside.
In a large skillet, heat 1-2 tablespoons of vegtable oil over medium heat. When oil is hot, carefully fry both sides of the quesadillas for 2 - 3 minutes or until golden brown, turning with a large spatula. Garnish with herbs.

Pumpkin Butter
*1 pound pumpkin, pureed or 1 (15-ounce) can pumpkin (not pie mix)
*1/2 cup water
*1 cup sugar
*1 teaspoon cinnamon
*1/4 teaspoon ginger
*1/4 teaspoon nutmeg
*1/8 teaspoon cloves
Combine all ingredients in crock-pot. Leave the lid partially open, so steam escapes. Set at low and cook, stirring occasionally, for 8-12 hours, or until it is no longer runny.
Makes 1 pint Pumpkin Butter
Angel Biscuits
*1 package active dry yeast
*1/4 cup warm water
*2 cups warm buttermilk
*5 to 5 1/4 cups all-purpose flour
*1/4 cup granulated sugar
*2 teaspoons baking powder
*1 teaspoon baking soda
*1 teaspoon salt
*3/4 cup chilled shortening
*4 tablespoons chilled butter
*melted butter
Dissolve the yeast in the 1/4 cup of warm water. Set aside.
In a large mixing bowl combine flour, sugar, baking powder, baking soda and salt. Cut in shortening until mixture is coarse.
Stir in yeast mixture and buttermilk, blending well.
Turn dough out onto a lightly floured surface and knead with flowered hands just a few turns.
Pat to about 1/2 inch thick
Cut with biscuit cutter.
Place on lightly greased baking sheet.
Cover and let rise in a warm place for about 30 minutes.
Bake at 400 for 15 - 20 minutes.
Brush tops with the melted butter while still hot.
Make 2-3 dozen
Cinnamon Rolls
Prepare your favorite yeast bread or yeast roll recipe.
Roll dough to 1/4 inch thickness.
Brush on melted butter and sprinkle with cinnamon and sugar. You can also add nuts and rasins.
Roll dough and slice.
Place sliced side down on greased cookie sheet and bake according to your bread recipe directions.
Allow to cool slightly before icing.
Icing
Melt 1 stick butter in bowl.
Add 1 teaspoon vanilla.
Add Powdered sugar until thick.
Drizzle on Cinnamon Rolls.
Paula's Cracker Recipe
*2 sticks butter
*1 cup sugar
*1 sleeve saltine crackers
*1 package semi-sweet morsals
*Nuts-crushed
Melt butter and sugar in saucepan.
Line a cookie sheet with foil.
Lay the saltine crackers side by side on the cookie sheet.
Pour butter & sugar mixture over the crackers.
Bake at 325 for about 20 minutes.
Take out and sprinkle the chocolate morsals over the top.
Put back in the oven for 2 minutes until chocolate is soft and spreadable.
Take out, spread chocolate and sprinkle with crushed nuts.
Cool then break into pieces and refriderate.
Banana Pudding
*1 large package instant vanilla pudding
*8 oz of whipping cream
*2 cups cold milk
*1/2 cup sugar
*ripe bananas, sliced
*vanilla wafers
Combine first 4 ingredients. Layer vanilla wafers, bananas and pudding mixture.
Meringue
*4 eggs whites - room temperature.
*8 tablespoons sugar
*pinch cream of tartar
Whip egg whites until peaks form. Continue to whip as you gradually add sugar and cream of tartar. Place meringue on Banana Pudding and bake at 325 degrees for 20 minutes or until peaks are light brown.
Pumpkin Cake
Beat together;
*3 eggs
*1 large can of pumpkin
*3/4 cup vegetable oil
*1/2 cup water
Then add;
*2 1/2 cups all purpose flour
*2 1/4 cups sugar
*1 1/2 teaspoon baking soda
*1 1/4 teaspoon salt
*3/4 teaspoon nutmeg
*3/4 teaspoon cinnamon
*1/2 cup chopped walnuts
Pour batter in greased and floured bundt pan.
Bake at 350 for 50 minutes.
Let cool.
Frosting;
*4 ounces softened cream cheese
*3 tablespoons softened butter
*1 teaspoon vanilla
*1/2 box powdered sugar
Frost cake and sprinkle with walnuts.
Cranberry Relish
*2 cups washed raw cranberries
*2 skinned and cored tart apples
*1 large, seedless orange, sectioned (leave the peel on)
*2 cups sugar
Chop fruit in a food processor - be very careful not to chop too much or it will be mushy.
Mix in sugar and let stand for about an hour, or until the sugar melts.
Store in the refrigerator.
Candied Yams
*4 pounds yams, peeled and cut into large bite-sized pieces
*2 cups orange juice
*3 cups light corn syrup
*1 teaspoon cinnamon
*1 teaspoon nutmeg
*1/4 cup vanilla
*2 teaspoons lemon zest
*2 tablespoons flour
*1 1/2 cups light brown sugar
*1 1/2 cups granulated sugar
Preheat oven to 350.
Boil yams until slightly undercooked.
In large bowl, mix orange juice, corn syrup, cinnamon, nutmeg, vanilla and zest.
In a seperate bowl mix flour and both sugars.
Place cooled yams in a deep baking dish.
Add dry ingredients and stir to coat yams.
Pour liquid over yams.
Bake for 20 - 25 minutes.
Mom's Sugar Cookies
*1 cup butter
*1 cup sugar
*2 eggs
*1 teaspoon vanilla
*2 3/4 cups flour
*1/2 teaspoon baking soda
*1 teaspoon baking powder
*1/2 teaspoon salt
*1/4 cup milk
In large bowl, cream butter and sugar until fluffy.
Add eggs, beating well.
Add vanilla and mix well.
Sift together flour, baking soda, baking powder and salt.
Add alternately to butter mixture with milk.
Cover dough and chil in refigerator for 4 hours or overnight.
Preheat oven to 350.
On lightly floured surface, roll out dough to 1/4" thickness.
Cut with cookie cutters.
Bake on ungreased cookie sheet for 7-10 minutes...until light golden brown around edges.
Icing
*1/2 cup shortening
*1 stick butter
*1 teaspoon vanilla
*4 cups powdered sugar, sifted
*2 tablespoons milk
*food coloring
Cream shortening and butter with electric mixer.
Add vanilla
Gradually add sugar, scraping sides and bottom of bowl often.
Add milk and beat until light and fluffy.
Add desired color.
Sweet Dream Bars
*1 cup chopped pecans
*2 tablespoons butter
*1 cup brown sugar
*5 tablespoons flour
*1/8 teaspoon baking soda
*2 eggs
*1 teaspoon vanilla
Powdered Sugar
Preheat oven to 350.
Melt butter in 8" square baking pan.
In small bowl, beat eggs
Combine pecans, brown sugar, flour and baking soda.
Stir in to eggs
Add vanilla.
Pour batter into baking pan over butter. DO NOT STIR.
Bake for 20 minutes.
Cool, cut into bars and sprinkle with powdered sugar.
White Chocolate Cheesecake
*8oz package chocolate wafers
*1 1/2 sticks butter - softened
*1 lb white chocolate
*4 8oz packages cream cheese - softened
*1/4 cup sugar
*4 eggs
*2 tablespoons vanilla
Preheat oven to 350.
Crumble chocolate wafers
In greased 10" springform pan mix crumbs with 1/2 stick butter, by hand press onto bottom of pan.
In heavy saucepan slowly melt white chocolate, stirring often. Let cool to room temp.
Beat together cream cheese and 1 stick butter until smooth.
Add melted white chocolate, eggs and vanilla. Beat until smooth.
Pour into pan over chocolate wafers.
Bake 1 hour. Cool
Cover and refrigerate overnight.
Wassail (Hot Spiced Apple Cider)
1 gallon apple cider
2 cups orange juice
1 cup lemon juice
1/2 cup sugar
2 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
Mix ingredients and slowly bring to a boil.
Boil for 1 minute, then simmer.
Serve with orange slices and cinnamon sticks
